BAKED SPINACH AND EGGS

So today I thought I would share with you this super delicious recipe that I have fallen head over heels in love with and it's also super filling and healthy!. What more could you want.


So, I tried this recipe out because I have adopted the Paleo lifestyle which I will be doing a whole blog post on about why soon. I was looking around for simple easy filling recipes and found this beauty.

This recipe will feed one but it's easy to adapt for a bigger dish.

What you need

  1. Spinach (3 cups)
  2. Eggs (2)
  3. Cheese (A sprinkle)
  4. Salt (I used rock salt but any would do)
  5. Pepper
  6. 1 tablespoon of Oil (I used Olive oil)
  7. Oven safe dish (mine is an individual dish from pound land)
  8. Water (2-3 tablespoons)
  9. Strainer
What to do

Preheat the oven to 200c or gas mark 6. Lightly grease the oven safe dish of your choice with the oil.

Place the spinach in a frying pan and add the water. Put the pan on medium heat and cook the spinach for around 2-3 minutes or until the spinach has just wilted. Remove the spinach from the pan and carefully (as it will be hot) remove the excess water. I used a strainer and a wooden spoon for this.

Next evenly layer the spinach in your oiled dish and then I added a sprinkle of salt and pepper.  Next carefully crack the eggs on top of the spinach and season the eggs with a small amount of salt and pepper. 

Then sprinkle your cheese carefully on top. I used mature shredded cheddar but feta will work just as well and maybe mozzarella. Or you don't even need to add cheese!.

Next place the dish in the oven and bake for 15-18 minutes. I checked on mine after 10 minutes, then again at five. However it can depend on how you like your eggs that you cook it for as long as it's cooked then it should be fine. Mine was a little too done for my liking but I know for next time.

If you are not doing paleo or you fancy a treat then a slice of toast would be so nice to accompany the dish!
